DIY Poke Bowl
Ingredients (serves 2)
300g cooked rice (any kind)
200g Edamame
100g Salad Leaves
100g fresh Pineapple
1 Spring Onion
1 Red Chilli
160g Salmon Sashimi (you could also use Smoked Salmon if you don’t have a sushi counter)
120g Wakame Salad
1 tbsp Yuzu Juice (Waitrose sell this, or you can substitute with the juice of a lime and orange, or grapefruit)
1 tbsp Soy Sauce or Tamari
1 tsp honey
2 tsp Sesame Seeds
Method
Finely slice the onion, cut the salmon into cubes and mix together
Cut pineapple into cubes, finely chop the chilli and mix together
Place salad leaves, rice, edamame, wakame into 2 bowls then top with the salmon and pineapple salsa.
Mix the soy sauce, yuzu and honey together and pour over the salmon, sprinkle with sesame seeds and enjoy!
