DIY Poke Bowl

Pretty proud of this homemade poke bowl, tastes almost as good as the original from Island Poke!

Ingredients (serves 2)⁣

  • 300g cooked rice⁣ (any kind)

  • 200g Edamame⁣

  • 100g Salad Leaves⁣

  • 100g fresh Pineapple⁣

  • 1 Spring Onion⁣

  • 1 Red Chilli⁣

  • 160g Salmon Sashimi (you could also use Smoked Salmon if you don’t have a sushi counter)⁣

  • 120g Wakame Salad⁣

  • 1 tbsp Yuzu Juice (Waitrose sell this, or you can substitute with the juice of a lime and orange, or grapefruit)⁣

  • 1 tbsp Soy Sauce or Tamari⁣

  • 1 tsp honey⁣

  • 2 tsp Sesame Seeds⁣

Method

  1. Finely slice the onion, cut the salmon into cubes and mix together⁣

  2. Cut pineapple into cubes, finely chop the chilli and mix together⁣

  3. Place salad leaves, rice, edamame, wakame into 2 bowls then top with the salmon and pineapple salsa.⁣

  4. Mix the soy sauce, yuzu and honey together and pour over the salmon, sprinkle with sesame seeds and enjoy!⁣
